:: Southwestern Salad ::
With an abundance of garden fresh lettuce, along with ground beef that was given to us, this recipe is an inexpensive meal for us! I'm thankful the broccoli and lettuce has done especially well in the garden this year. We enjoy this refreshing salad for dinner...
Here are the ingredients:
lettuce, washed and torn
ground beef
black beans
shredded cheddar cheese
sour cream
tortilla chips
Cook the ground beef as you usually would, then add a regular size package of taco seasoning and follow package directions. To save money on black beans, we purchase dried beans and cook them. (Here are further directions.) Also, putting garlic cloves in the black beans while cooking helps prevent the unenjoyable after effects some people suffer from. My family eats the hamburger meat, black beans and corn with the rest of the ingrdients right after cooking, but I know some enjoy the hot ingredients at least somewhat cooled before they mix them with lettuce. Finally, layer the ingredients on plates or bowls in the order listed...and enjoy this nutritious meal!
