 :: Gingerbread Pancakes ::
  • 1 cup plus 3 T. flour
  • 2 T. sugar
  • 1 tsp. baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1 egg
  • 3/4 cup milk
  • 2 tablespoons molasses
  • 1 tablespoon canola oil


In a large bowl, combine the first six ingredients. Combine the egg, milk, molasses and oil; stir into dry ingredients just until moistened. Pour batter by 1/4 cupfuls onto a greased hot griddle; turn when bubbles form on top. Cook until the second side is golden. Makes around 12's hard for me to know the exact amount because I typically quintuple the recipe, and I think it does five dozen. [smile] These taste great with butter or homemade maple syrup...or both! Enjoy!
