Autumn Deliciousness: Pumpkin Muffins


Ah, yes...more pumpkin. It's just that time of year for pumpkin in everything. Cake, muffins, cupcakes, whoopie pies, pancakes, pie, and more!

Pumpkin Pecan Muffins
3 1/3 c. flour
2 1/2 c. sugar
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. ground cinnamon
1 tsp. ground nutmeg
15 oz. canned pumpkin
1 c. oil
4 eggs, lightly beaten
2/3 c. water
1 1/2 c. chopped pecans

Combine first six ingredients in a separate bowl. Thoroughly mix the pumpkin, oil, eggs and water. Stir into dry ingredients just until combined. Fold in the pecans. Pour into greased muffin tins (or use muffin liners!), filling the tins 3/4 full and bake at 325 degrees for 20-25 minutes or until toothpick comes out clean.

Glaze (optional)
1/4 c. butter
1/4 c. sugar
1/4 c. brown sugar
1/4 c. milk or whipping cream
2/3 c. confectioners sugar
1 tsp. vanilla extract

Combine first four ingredients. Cook until sugar is dissolved. Cool 20 minutes, then stir in confectioners sugar and vanilla until smooth. Drizzle over muffins.

I tripled the recipe which yielded three dozen muffins, one loaf and one 9x13 pan. I figure a single recipe would make around 18 muffins or so. Enjoy...and don't forget to share 'em with friends and family! [smile]

Perfect smell to wake up to, in the morning! I can't turn down anything pumpkin...and I'm a true pecan fan, so you can't mess up putting them together:)
