Mexican Hot Chocolate

The weather has been unsually cold here in Florida. A couple days ago, Ellen thoughtfully made us some delicious hot chocolate. We enjoyed it so much I'm passing the recipe along!

Mexican Hot Chocolate
5 Tablespoons cocoa
1/2 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1/3 c. honey
1/2 c. hot water
4 c. whole milk
1 tsp. vanilla
Combine the cocoa, cinnamon, nutmeg, salt and honey in the saucepan and mix well. Stir in the hot water. Next, put the pot on a burner at medium-high heat, stirring constantly until mixture begins to boil. Turn down heat so mixture barely simmers for 30 seconds. Stir constantly. Add the milk, stirring constantly for 1-2 minutes on medium heat, but don't let it boil. Remove from heat and stir in vanilla. Use wire whisk to beat hot chocolate until frothy. Add a small sprinkling of cinnamon on top when serving. Enjoy!
